Cake Mix Cookies

If you’re looking for a last-minute homemade dessert this time of year, this recipe will give you festive cookies with just a few ingredients. All you need is a box of cake mix and sprinkles. We’re using classic yellow cake mix for this cookie recipe for a lightly flavored vanilla cookie. This recipe is highly customizable, so feel free to use any flavor cake mix.
Ingreadient:
- 1 (15.25-oz.) box classic yellow cake mix
- 2 large eggs, room temperature
- 1/2 c. vegetable oil, plus more for greasing
- 3/4 c. sprinkles
Direction
- Preheat oven to 350°. In a large bowl, whisk cake mix to aerate and remove any clumps. In a medium bowl, whisk eggs and oil until smooth. Using a spatula, gently fold egg mixture into cake mix until a dough forms and no dry streaks remain.
- Place sprinkles on a plate. Grease a medium ice cream scoop with oil. Using prepared scoop, scoop out dough and roll in sprinkles until exterior is coated. Arrange between 2 parchment-lined baking sheets, spacing about 2" apart.
- Bake cookies until slightly firm, 10 to 12 minutes. Let cool.
